Lublu Basbosa

Semolina, syrup, and too many trays in the oven.

About

This is a small notebook for one cake. Basbousa (also called hareeseh or namoura depending on where you ask) is a semolina cake soaked in syrup, baked in a tray and cut into diamonds.

Every family makes it a little differently — more yogurt, less sugar, coconut or no coconut, almonds or peanuts on top. These pages are the versions that worked in a home oven, with notes on what went wrong along the way.

"Lublu" is Russian for "I love". It seemed fitting.
